One-Pot Meatball Casserole Weekday Dinner Recipe by Martha Stewart

On a cold winter night, nothing beats a warm meal made from scratch. The meatballs themselves are quite traditional and are a mixture of ground beef and pork. They are combined with eggs and breadcrumbs and get their aroma from grated pecorino cheese, garlic and parsley. They will be fried in your frying pan (we like Ina Garten’s favorite cast iron Lodge frying pan, or Le Creuset’s cast iron frying pan with lacquered enamel) until the whole is browned, and then removed from the pan.
All the brown pieces at the bottom of the pan add flavor to the tomato sauce, which is made with onions, red pepper flakes and tomatoes in the same frying pan. Return the meatballs to the pot and cook in the tomato sauce until cooked through. When they are cooked, the meatballs will season the sauce, and the sauce will infuse the meatballs into the gravy in a delicious exchange.
After cooking, add fresh cheese to the meatballs, then transfer the frying pan to the broiler, where the fresh cheese is melted into a creamy milky puddle (you can also add a small amount of chopped low-moisture cheese) and Extra Pecorino (if you want some cheesy flavor of brown).
Usually, we add pasta or other pasta to the meatballs, but Stewart has another idea to save money. She recommends eating this simple one-pot meatball casserole with toast. In this way, you can save the pasta pot and strainer, and the firm crusty bread is just the tools you need to scoop up tender meatballs, spicy sauce and melt cheese.
Just like you are cooking all day, this is the taste of a meal, but in fact, you will have dinner in about an hour. That is a good thing!
